     Pumpkin Quinoa Muffins

Ingredients
1 cup canned pumpkin
1/4 cup agave nectar or maple syrup
1/4 cup unsweetened applesauce
1 egg - 1 egg white
1 tsp vanilla extract
1 cup almond meal
1 cup rolled oats, ground into flour
1/4 cup ground flaxseed
1/2 cup cooked quinoa
 
1/4 cup sugar
1 tsp baking soda
1 1/2 tsp pumpkin pie spice
1/2 tsp cinnamon
1/2 tsp salt

Instructions
Pre-heat the oven to 350 degrees and spray a muffin tin liberally with cooking spray. In a large bowl, whisk together wet ingredients (pumpkin, agave, applesauce, egg, egg white and vanilla). Add in the rest of the ingredients and stir until just combined. Do not over mix. Fill muffin tins completely with batter (up to the top). You should be able to make about 9 muffins. Bake for 25-28 minutes, or until a knife comes out clean.
