     Black Bean Cheeseburgers

Ingredients
2 cans (15 oz. ) black beans,drained and rinsed
2 scallions, finely chopped
1/2 red pepper, chopped
1 tbs. Dijon mustard
1 jalapeno pepper chopped, opitional
1/2 tsp. kosher salt
1 egg yolk
1/4 cup canola oil
6 whole wheat hamburger buns
 
6 slices sharp cheddard or jack cheese
lettuce,tomato, pickles,mustard guacamole salsa

Instructions
Combine all ingredients mash beans until all ingredients are incorporated but not a smooth paste; you want to see some whole beans. cover and refrigerate at least 45 minutes. Shape into patties mixture will be sticky , might fall a part just press back together.
Cook in Hot cast iron skillet Add enough oil so burgers won't stick Saute 2 minutes on each side turn over carefully add cheese to melt
