Combine eggs, milk, flour and salt in a mixing bowl and beat 1 1/2 minutes.
Add melted lard and continue beating for 30 seconds.
Pour equal amounts of batter into 6-8 well greased muffin or custard cups-filling each 2/3 full. Bake immediately in 350F oven 30 minutes with the door ajar.
