     Potatoes-Roasted

Ingredients
8 Large Red potatoes
2 Tbl. Extra Virgin Olive Oil
1/2 tsp. salt
1/4 tsp. black pepper
1 Tbl. chopped fresh parsley
1 tsp. chopped fresh thyme leaves
 

Instructions
Preheat oven to 450 deg. Peel potatoes and carefully slice each one thinly without cutting through.
Place potatoes in microwave dish, cover with waxed paper and cook on high for 15 minutes until easily pierced with a knife.
Transfer potatoes to metal baking dish (I put foil under them.) Carefully drizzle oil in between slices. Sprinkle with 1/2 tsp. salt and 1/4 tsp. pepper. Roast in oven for 25 minutes or until lightly browned.
Transfer to platter and sprinkle with herbs.
