     Southern Comfort Yams

Ingredients
5 lbs. Yams
3 Oranges zested, then sectioned
2 Cups Orange Juice
1 Cup Southern Comfort
1/2 Cup Brown Sugar
3 TBSP. Butter
1 tsp. Kosher or Sea Salt
1/2 tsp. Chinese 5 spice powder (Omit if you don't have.)
1/2 tsp freshly grated Nutmeg
 
2 tsp. Cinnamon, divided
1/2 tsp. Ginger

Instructions
Bake washed and pierced yams at 350 degrees just until done. DO NOT OVER BAKE. Cool, peel, then slice yams in rounds about 1 1/2 inches thick. Place yam slices in deep pan approx. 12 x 10 x 4 inch deep. Sprinkle yams with 2/3 of the orange zest. Place orange sections amongst the yams. Season yams, with salt, Chinese 5 spice powder, nutmeg, 1 tsp. cinnamon and ginger. Preheat oven to 350 degrees.
TO MAKE SAUCE Gently heat orange juice in saucepan over low to medium heat and bring to a simmer. Add brown sugar and remaining 1/3 of orange zest and stir to dissolve. Add butter and 1 tsp. cinnamon. Cook gently at simmer, stirring constantly until slightly thickened, about 10 minutes. Taste and add additional spices if desired. Add Southern Comfort and stir to blend. Cook gently about 10 more minutes and let thicken slightly. Pour sauce over yams. Sauce should cover about 2/3 of the way up the yams. If not add a little more orange juice. Reheat yams for 45 minutes in 350 degree oven
