     Protein Carrot Cake with Cream Cheese Icing

Ingredients
2 scoops Protein Powder (1 casein, 1 whey)
1/2 cup Oats
30 g Golden Raisins
30 g Crushed Walnuts
1 cup Greek Yogurt (Plain, 0%)
1/4 cup Almond Milk
1 Egg (Whole)
1 Egg (White)
1/2 cup Shredded Carrots
 
2 tbsp Low Carb Syrup
2 tbsp Splenda
1/2 tsp Baking Soda
Vanilla/Cinnamon/Misc. Spices to Taste
Icing
1/4 cup Greek Yogurt (Plain, 0%)
1/4 cup Fat-Free Cream Cheese
2 tbsp Vanilla Protein Powder (Casein)

Instructions
1. Preheat the over to 350 degree F. 2. Combine all the ingredients for the cake. 3. Prepare a square pan by spraying with non cook spray. 4. Evenly distribute mixture in pan. 5. Place in over and cook at 350 degree F. for 20-22 minutes. 6. Remove from over and cool on a rack. 7. Combine ingredients for icing in a small bowl, mixing simply with a spoon until even. 8. Ice cake as desired.

Turned out GREAT! Next time I want to try something with more spice - maybe pumpin pie spice!
