     Hazelnut Biscotti

Ingredients
8 eggs
3/4 c vegetable oil
2 c sugar
3 c flour
3 tsp baking powder
1/2 tsp salt
1 tsp vanilla
3/4 cup hazelnuts-chopped
 

Instructions
Preheat oven to 350F. Beat eggs, oil and sugar until well blended. Sift flour, baking powder, and salt. Gradually add dry to the eggs. Beat in vanilla. Fold in nuts.
Turn into 2 9x13x2 greased baking pans and bake for 30 minutes. Turn out on to a cutting board and slice into 3/4 inch wide by 9 in slices. Arrange on cookie sheet and toast the slice on the side for 10 minutes. Cool and store.
