     GRANDMA LEHNING’S PEANUT BRITTLE

Ingredients
2 c. sugar
1 c. light corn syrup
1/2 c. water
1/2 tsp. salt
1 lb. raw peanuts
2 Tbs. butter
2 tsp. vanilla
1 1/2 tsp. soda
 

Instructions
Combine sugar, syrup, water and salt in 6 qt. saucepan. Bring to a full rolling boil. Cook to soft ball stage on candy thermometer. Add peanuts. Cook to hard crack stage on candy thermometer stirring constantly. (will be golden brown). Remove from heat and stir in butter and vanilla. Add soda. Stir to blend. (Mixture will bubble.) Quickly pour onto 2 buttered cookie sheets. Spread where necessary. Brittle will be hard within a few minutes and can be broken into pieces.
