     Easy Banana Pancakes

6 tablespoons (3/4 stick) unsalted butter
1 1/2 cups all purpose flour
2 tablespoons sugar
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1 very ripe banana, peeled
1 cup milk
2 eggs
1/2 teaspoon vanilla extract
Maple syrup for serving
sliced bananas for serving

Cut butter into 3 equal pieces. Melt in microwave 2 of the butter pieces. Set aside. In a bowl combine the flour, sugar, baking powder and salt. Blend well.
I a separate bowl mash banana until smooth. Add milk, eggs and vanilla until well blended. Add Banana mixture, melted butter and flour mixture all together until well blended. Batter will be a little lumpy.
Over medium heated griddle, melt remaining butter. Pour batter evenly across griddle about 3 inches apart. Cook until a few holes form on top of each pancake and the undersides are golden brown, about 2 minutes.
Makes about 12 pancakes.
