     Coconut Thumbprint Cookies

Ingredients
1/2 cup margarine
1/2 cup sugar
3/4 cup all purpose flour
1 tsp vanilla
1/4 tsp salt
1/4 tsp baking powder
2/3 cup coconut flakes
1/4 cup thick jelly or jam
 

Instructions
Preheat oven to 375F. Grease baking sheet. Cream butter flavored crisco with sugar, egg yolk and vanilla. Combine flour with salt and baking powder. Add to creamed mixture. Blend well. Form in to balls about 1 inch Beat egg white until slightly frothy. Dip dough into egg white than roll in coconut. Place on greased cookie sheet.
Make a shallow depression in the center of each cooking using thrum or back of spoon. Spoon 1/2 measuring teaspoon of jam/jelly/preserves into each cookie. Bake for 8-9 minutes at 375F, until coconut begins to brown.
