     Thai Coconut Curry Soup

Ingredients
a. 1 teaspoon oil
a. 3 teaspoons minced ginger
a. generous teaspoon curry paste
b. 1.5 cups chicken broth
b. 1 tablespoon and 1/2 teaspoon fish sauce
b. 1 teaspoon brown sugar
b. green bell pepper (I prefer big chunks)
c. 1 can coconut milk
c. sliced mushrooms
 
d. 3 teaspoons lime juice
d. 1.5 tablespoon diced cilantro

Instructions
Heat up the oil in the pan and mix the A mixture for about a minute.
Add the B mixture and simmer for 15 minutes.
Add the C mixture and simmer for another 10 minutes.
Add the D mixture and serve
