     AU GRATIN POTATOES

Ingredients
2 Tbs. butter or margarine
2 Tbs. flour
salt and pepper to taste
1 c. milk
 

Instructions
In a saucepan over medium heat, melt butter. Whisk in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Use immediately or refrigerate. Yield- 1 cup. In general, use the following amounts of flour and butter for each cup of liquid- 1 Tbs. each for a thin sauce 2 Tbs. each for a medium sauce 3 Tbs. each for a thick sauce 4 Tbs. each for a heavy sauce
