     PARSLEY NEW POTATOES

Ingredients
3 lbs. small new
potatoes
1/3 c. butter
¼ c. chopped fresh flat-leaf parsley
1 tsp. salt
¼ tsp. pepper
 

Instructions
Bring potatoes and water to cover to a boil in a Dutch oven over medium heat, and cook 20 minutes or until tender. Drain and return to Dutch oven. Microwave butter in a microwave-safe glass bowl on high 45 seconds or until melted. Stir in parsley, salt, and pepper. Pour over potatoes, gently tossing to coat. Serve immediately.
