     Classic Mint Sauce

Ingredients
1 bunch fresh Mint Leaves finely chopped
1 tablespoon Castor Sugar
80 ml ( 1/3 cup ) boiling Water
5 tablespoons Apple Cider Vinegar
 

Instructions
Combine the Mint and sugar in a small heatproof bowl. Add the boiling Water and stir until the Sugar dissolves.
Add the Cider Vinegar. season with Salt and Pepper. Stir until combined.
Allow to sit for 1 hour. Store in a jar and keep in fridge.
