Pre-heat oven to 180 C.
Spray a 20 cm cake tin with oil.
Line base and sides with non-stick baking paper.
Heat Oil in a large non-stick frying pan.
Stir-fry the Vegetables until soft.
Transfer to the prepared pan.
Use a balloon whisk to beat eggs and milk together.
Season with Salt and Pepper.
Pour over Vegetables.
Bake for 25 - 30 minutes or until set and golden.
