     Easiest White Chicken Chili EVER

Ingredients
4 cans navy, Great Northern or Canelli beans (you can also use 1 lb dry beans)
1 jar green salsa (I use Herdez brand)
2 boneless skinless chicken breasts
1 can / jar or a package of fresh mushrooms (optional)
Garnish (also optional)-
Grated pepper jack cheese
Sour cream
 

Instructions
Dump everything but the cheese and sour cream in a crock pot. Cook on whatever setting you'd like (if I'm in a hurry I put it on high and if not, I use low) and cook until the chicken is done, about 4 hours for high and 6 for low. Don't worry about overcooking because unless you completely just forget about it or cook it on high for 8 hours, you'll be fine.
Once the chicken is done, shred it. I use two forks and do it right in the crock pot but you can also remove it and then add it back if that's easier for you.
Top with grated cheese and a bit of sour cream and viola!
This would probably also work on the stovetop but I haven't done it so I couldn't tell you cooking times.
