Mix Eggs, Sugar, 1/4 cup Flour, and salt until creamy. Stir in Rhubarb by hand. Spoon mixture into crust and bake for 35 minutes. Serve with cool whip and your favorite cup of coffee. Enjoy!

This recipe originally belonged to my Great, Great Grandma Mais. My German Great Grandma made so many desserts with rhubarb- snack cakes, crisps, crunches, pies, you name it. She said this was her favorite dessert to have in Germany, Ideally out in the sun, in front of a cafe, with a cup of coffee. The tradition continues; I have my own rhubarb patch wherever I live.
