     Smoky Eggplant With Pine Nuts

Ingredients
2 (1- lb) eggplants, peeled
1/4 cup PLAIN Greek yogurt
1 tsp. smoked salt
1 tsp. finely minced garlic
1 Tbl. l fresh lemon juice
2 Tbl.extra-virgin olive oil
1/4 to 1/2 tsp. crushed red pepper flakes
1/4 tsp. salt ...fresh ground pepper
1/2 cup toasted pine nuts
 

Instructions
Preheat oven to 350. Cut eggplants into halves lengthwise. Place cut sides down on a lightly oiled baking sheet. Bake 45 mins...until tender. Cut roasted eggplant into chunks...place in food processor w/ all ingredients. Process until smooth. Yumm!!
