     NANCY’S WHITE CHILI

Ingredients
1 lb. white beans, canned
6 c. chicken broth (or more)
1 tsp. chicken stock base
4 c. cooked, diced chicken
1 onion (chopped)
6 cloves of garlic, minced
1/2 of a 7 oz. can diced chilies
1 tsp. cumin
1 shake of oregano
 
1/2 tsp. cayenne red pepper
1 c. sour cream
3 c. Monterey Jack cheese

Instructions
Simmer beans, chicken broth and chicken stock base. Sauté onion in 1 Tbs. oil. Add cloves of garlic and 1/2 of a 7 oz. can diced green chilies. Add cumin, oregano, cayenne red pepper and cooked chicken to the bean mixture. Right before serving, add sour cream and Monterey Jack cheese.
