     Low Sodium Tomato Sauce

Ingredients
5 fresh, ripe tomatoes, seeded and diced
1/2 cup chopped fresh basil leaves
3 tbsps. olive oil
2 cloves of garlic, minced
2 tsps. balsamic vinegar
juice of 1/2 a lemon
1/2 tsp. unsalted chili powder
freshly ground black pepper
 

Instructions
Combine the diced tomatoes, basil and garlic in a bowl and stir to distribute evenly; add the olive oil, lemon juice and vinegar and stir to blend. Sprinkle with the chili powder and a generous grinding of black pepper, stir again to blend and allow to stand for at least half an hour before serving. (14 mg of sodium per serving)
