     Parmesan Polenta

Ingredients
1 cup Skim Milk
1 cup Low Sodium Chicken Broth
½ cup Yellow Cornmeal
¼ cup Grated Parmesan
1 tsp Olive Oil
Salt, to taste
 

Instructions
Bring milk and broth to a boil in pan over medium high heat. Slowly stir in cornmeal, reduce heat to low and simmer until thick, 5 minutes, stirring constantly. Off heat, stir in Parmesan and oil, and season with salt. Serves 2
