     Golabki or Polish style Pigs in Blanket

Ingredients
1lb lean ground beef
1lb ground pork
1lb ground veal
1 head cabbage
2c cooked rice
1c chopped onion
2 eggs
2qt tomato juice
1c cold water
 
1/2t salt
1/2t pepper
1/2t garlic powder
1/4t celery salt

Instructions
Now, since there are as many recipes for stuffed cabbage as there are towns in Poland, You can add to this recipe if you like- 1 cup green pepper ½ cup ketchup 1Tbsp brown sugar ¼ teaspoon basil ¼ teaspoon nutmeg or allspice
Freeze cabbage head solid, then peel leaves as they thaw and run under cold water. Cut the central vein off the back of each leaf. Saute onion in margarine until brown. Place all uncooked meat in mixing bowl with sauted onion. Next, add all other ingredients (except tomato juice and water) and mix thoroughly using hands. Lay out cabbage leaves and place 1-3T of meat mixture. Roll leaf over meat, tuck in sides and finish rolling. Places rolls, seam side down in a greased pan. Pour tomato juice, water and brown sugar evenly over rolls. Cover and bake at 325 for 2 1/2 hours, checking after 1 hour to make sure there is sufficient liquid.
OR I usually steam them in a large pot with the extra cabbage leaves lining the pot, this way the cabbage does not get mushy and you can transfer this to a roaster and add the tomato sauce for the last hour to cook
In Poland tomato sauce is not as popular as mushroom gravy poured over the piggies. You can use cream of mushroom soup, and add extra mushrooms and sautéed onions and pour over them in the roaster and cook an hour at 325, or pour the gravy on top prior to serving.
