Saute the chopped onion and carrots together for 3-5 minutes. Add the chopped red pepper. Saute for 3 minutes more. Add the can of corn (drained). Saute 2 minutes more.

Mix the sauteed vegetables with the prepared cauliflower rice.

|
|
Stuff the red peppers with the cauliflower rice/vegetable combination.
|
|
|
Place in a baking pan. Top with shredded cheese if desired. Cook for 30 minutes at 350.
