     Corny Corn Bread

Ingredients
Shortening or Cooking Spray
1 12 oz. can of whole kernal corn wth sweet peppers, drained
1 c. yellow cornmeal
1 c. all purpose flour or whole wheat pastry flour
1/4 c. of sugar
1 T baking powder
1 t. salt
2 eggs
1 1/4 c. of milk
 
1/4 c. cooking oil

Instructions
Preheat oven to 425 degrees. 1. Grease the 9x9x2 in. baking pan with the shortening or cooking spray. 2. Measure the cornmeal, flour, sugar, baking powder and salt into a large bowl. Stir with a spoon until well blended.
3. In a small bowl, beat eggs with a fork. Add the drained corn, milk and oil to the bowl. Stir with a fork until well blended. Add the flour mixture. Stir with a wooden spoon until well mixed.
4. Pour the batter into the greased pan. Put the pan into the oven. Bake until the corn bread until golden (about 35-40 minutes).
5. Remove from oven and cut into 9 pieces.
Serving Suggestions
Serve with soup or stew. Great for breakfast.
