     Carrot/Currant Muffins

Ingredients
3/4 cup currants, soak in hot water 20 min.
1 1/2 c and 4 1/2 tsp flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cardamom
1 tsp ginger
3 large eggs
1/2 cup veg. oil
 
1 cup sugar
3 1/2 cup grated carrots
slivered almonds

Instructions
mix dry ingredients. beat eggs, oil & sugar. Stir in three batches.Fold currants and carrots.
butter muffin tins. Bake at 350 degrees. Cool on rack for 10 minutes.
