     Cauliflower Bisque

Ingredients
Medium-size head of Cauliflower - break into flowerets
1 Qrt. chicken broth
1 cup half & half - fat free
2 TBLS. Corn starch
1/2 large Red bell pepper - finely chopped
1 TBLS. butter
1 TBLS. Olive Oil
1 small vidalia onion - finely chopped
1 cup portabella mushroom - chopped
 
4 oz. monterey jack cheese with jalapeno - shredded
4 oz. sharp cheddar cheese - shredded
Dash cayenne (red pepper)

Instructions
In 4 quart sauce pan combine cauliflower and chicken broth. Cook until detente. Lightly mash Combine half&half and corn starch. Add to broth to thicken.
Microwave red pepper for 1 minute. In fry pan heat up butter and olive oil. Add onions and mushrooms, Saute until onions are clear. Combine red pepper to mixture.
Add sauteed vegetable mixture and cheeses to broth. Sprinkle with cayenne. Simmer for 10 minutes.
