Alternative- Stuffed Sweet Potatoe
Cook as above. Remove the flesh and combine with 1/2 cup low fat yogurt, salt and pepper to taste; 2 green onions diced. Mash all of the ingredients together. Then spoon back into the skins and top with ham, more diced green onions and cheese
