     Mincemeat in Slow Cooker

450g cooking apples (chopped), 115 g each candiedcitrus peel, glace cherries, chopped dried apricots, blanched chopped almonds. 150ml brandy, 225g sultanas, 225g currants, 450g raisins, 225g dark brown sugar. 225g suet. 2tsp ground ginger, 1tsp ground cinnamon, 2.5tsp grated nutmeg, 1tsp all spice, grated rind and juice of one lemon and orange.
Reserve half of the brandy .Put all the ingredients in the slow cooker.Cook on high covered for 1 hr.Stir the mixture and cook on low for a further 2 hrs..Remove the lid and cool completely.Stir in the reserved brandy, mix well and put in sterilised jars.Cover and put in a cool dark place fir up to six months. Once opened store in the refrigerator and use within 2 week .Makes about 1.75k mincemeat.
