     Biscotti Corby Kummer

Ingredients
1 1/4 almonds, blanched or unblanched
2 c flour
1 C sugar
1 t baking soda
3 large eggs
1/2 t vanilla
pinch salt
dry cranberries (opt)
 

Instructions
350 toast almonds 8-10 min. let cool. Reduce heat to 300. Process eggs and vanilla for 5 seconds. Add dry ingredients 1/2 c at a time. Not quite form a ball. Add nuts and pulse 5 times. Turn out and knead about 12 times with floured hands. Let rest 5 min.
Divide into 3. Rope 1 inch wide or so. Place on parchment. Bake 50 min at 300. Slice diagonally and return to oven. Turn oven off and let dry out. Very crisp. No oil or fat.
