     KYM’S FROG EYE SALAD

Ingredients
2 eggs
13 oz. Cool Whip
1 c. sugar
1 c. flaked coconut (optional)
1 Tbs. flour
1 c. colored mini marshmallows
2- 20 oz. cans pineapple tidbits, drained (save juice)
½ tsp. salt
3 cans mandarin oranges, drained
 
1 Tbs. lemon juice
1 lb Acini de pepe pasta

Instructions
Combine eggs, sugar flour, and salt in a saucepan. Add the juice from pineapple tidbits (1 ¾ c.) Cook until thick; add lemon juice; cool. While above is cooling, cook pasta as directed on the package. Drain well and combine with first mixture. Chill in air tight container overnight or at least several hours. Put chilled mixture in large bowl and fold in oranges, cool whip, coconut (optional), pineapple, and marshmallows. Chill for at least 4 hours before serving.
