Place a 9x13 inch baking dish in the oven and fill it with 1/2 inch of hot water.
Pre-heat oven to 350 degress
Place sugar in a heavy saucepan and cook over medium heat, stirring unit it melts and turns golden brown, about 8 minutes. Pour caramelized sugar into 9x5 incl loaf pan, tilting pan to coat sides and bottom. Set aside.

In a medium bowl using an electric mixer, beat the eggs well. Stir in the coconut with its syrup, the pineapple juice and vanilla and beat for 1 minute. Pour into the loaf pan, place in the water-filled baking dish and bake for 1 hour or more until firm or when the knife inserted into middle comes out clean
