     Pumpkin Apple Breads

3 cups all-purpose flour
2 tsp ground cinnamon
2 tsp baking soda
1 1/2 tsp salt
3 cups granulated sugar
1 can (15 oz) Pumpkin
4 large eggs
1 cup vegetable oil
1/2 apple juice or water
2 large tart apples, peeled, cored and dices
Streusal Topping-
1.5 TBLSP flour
5 TBLSP Granulated Sugar
1 tsp ground cinnamon
1.5 TBLSP Butter, softened
2 TBLSP Brown Sugar

Preheat oven to 350 (325 for electric oven). Grease and flour seven mini loaf pans or two 9 x 5 loaf pans. Set aside.
Combine flour, cinnamon, baking soda and salt in large bowl, whisk til blended.
Combine sugar, pumpkin, oil, eggs and apple juice or water in mixing bowl. Beat just until blended. Add pumpkin mixture to flour mixture, beating just til blended. Fold in chopped apples. Spoon batter equally into prepared pans.
Make Topping- soften butter and mix together til blended. Sprinkle evenly over each loaf. For small pans, bake 45-50 min, for large pans, bake 60-65 until toothpick comes out clean. Cool X 10 min, then invert on racks to cool completely.

This makes two large amazing loafs!!!
