     Fresh vegetable pasta salad

Ingredients
1/4 cup parsley sprigs
2 Tab salad oil
2 Tab white wine vinegar
2 Tab water
1-2 cloves garlic
1/2 tsp dry mustard
1/4 tsp salt
1/4 tsp pepper
2 oz. fettuccine , broken
 
1 lg carrot, cut into strips
1 small zucchini, cut thin strips
1/2 cup frozen peas
1/2 cup mozzarella or swiss

Instructions
Dressing- Blend parsley, oil, wine, water, garlic, mustard, salt and pepper.
In lg saucepan cook pasta. Add carrots last few minutes. Drain.
In a lg bowl combine pasta, vegetables and cheese. Add dressing and toss.
