     Loaded Baked Potato Soup-crockpot

7 cups of potatoes
1 cup yellow onion
2 tsp minced garlic
3 cups of chicken stock
1 1/2 tsp salt
1 tsp of ground pepper
1 cup of heavy cream
4-6 slices of bacon
cheese of your choice
Green onions

Peel all of the potatoes and chop into small chunks. Chop the onion as well.
Add all of the vegetables to the crock pot. Add the salt, pepper and chicken stock. Cover and cook on high for 3 1/2 hours or 6 hours on low.
While that is cooking, cook the bacon. Add any remaining bacon grease to the crock pot. Stir gently and cover back up. Chop the bacon and set it aside.
Remove 1/3- 1/2 of the potato chunks to a blender with heavy cream. Blend until smooth. Put the mix back into the crock pot, stir and cover. Cook for 30 more min. When ready to serve, put the shredded cheese, green onions, bacon and any additional toppings that you wish.
