Filling- Mix dates, water, sugar, salt and vanilla together in a saucepan. Cook for 10 minutes. Stir in walnuts. Cool.
Crust- Sift flour, salt and baking soda together in a bowl. In mixer- cream butter and sugar. Add eggs and beat well. Slowly add flour mixture. Divide dough into 3 parts. Roll out one part between 2 pieces of waxed paper. Remove top sheet and spread with 1/3 of date mixture. Starting at one end, roll into a log, loosening the paper as you go. Wrap in plastic wrap. Repeat with other 2 portions of dough.
Refrigerate 2 hours. Slice into 1/4 inch rounds. Bake at 350 degrees for 10-15 minutes.
