Basil pesto sauce- Combine 3 garlic cloves, 2 ozs basil leaves, 2 tbs toasted pine nuts, 1/4 cup grated Parmesan, 1/2 tea kosher salt, 1/4 tea pepper, 3 tbs water, and 1 1/2 tbs olive oil in a food processor; process until smooth. Warm over low heat, if desired. 100 calories per person
Creamy Cheese Sauce- Heat 1 1/2 tea olive oil in a saucepan over medium heat. Add 2 tea garlic; cook 2 minutes. Add 2/4 cup lower sodium chicken broth, bring to a boil. Whisk in 2 oz 1/3 less fat cream cheese, 1/4 cup parmesan cheese, 1 tbs flour, 1/4 tea salt and 1/4 tsp pepper. Cook 5 minutes, stir well. 80 calories per person
Tomato Sauce with Fresh Herbs- Heat 2 teas olive oil over medium heat, Add 1/2 cup chopped onions;cook 4 minutes. Add 2 teas garlic, cook 1 minute. Add 1 (14.5 oz) can crushed tomatoes, 2 tbs chopped fresh basil, 1 tbl chopped fresh oregano, 1.2 tea kosher salt, and 1/4 tea pepper; bring to a boil, Reduce heat; simmer 30 minutes
