     Zucchini Bread

Ingredients
3 eggs
1 cup veg oil
2 cups sugar
2 tsp vanilla
2 cups coarsely shredded fresh zucchini
1 8-oz can crushed pineapple, drained
1 1/2 cups whole wheat flour
1 1/2 cups all-purpose flour
2 tsp baking soda
 
1/2 tsp baking powder
3/4 tsp nutmeg
1 tsp salt
1 1/2 tsp cinnamon
1 cup raisins (optional)
1 cup chopped nuts (optional)

Instructions
Beat eggs one minute, add salad oil, sugar and vanilla. Beat until thick and lemon colored. Gently stir in zucchini (if using frozen zucchini, thaw and drain, then measure 2 cups) and pineapple. In separate bowl, combine remaining ingredients and gently fold into zucchini mixture until just blended.
Bake in two greased and floured pans (9X5 loaf) for 1 hour at 350 degrees. Cool in pan 10 minutes before turning out.
