     Fennel and Tomato Soup

Ingredients
1 T olive oil
2 medium fennel bulbs, diced (about 4 cups)
2 vegan sausages sliced or diced
2 T white wine or broth
4 cups vegetable broth
2 14 oz cans diced tomatoes
2 T parsley
Salt and pepper to taste
 

Instructions
Heat oil in soup pot, add fennel and saute 5 minutes. Stir in sausages and cook another 10 minutes. Deglaze pot with wine. Add broth, tomatoes, parsley, salt, and pepper. Cover, bring to a boil, and simmer 30 minutes.
Serving Suggestions
Great with a salad or grilled cheese sandwiches.
