     Chicken Wild Rice Salad

Ingredients
1 small package wild rice, cooked as directed
Cooked whole chicken breast - chunk and squeeze lemon juice as chunking
3 green onions, sliced
1/2 red pepper, diced
2 ripe avocados, chunked
1 cup pecan halves, toasted (350 degrees, 8-10 minutes)
Dressing
2 large cloves garlic, chopped
 
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup vinegar
1/3 cup vegetable oil

Instructions
Toss rice with dressing and refrigerate 2-4 hours. Toss remaining ingredients just before serving.
