     JOAN'S PEANUT BUTTER SHEET CAKE

Ingredients
2 c. flour
1/2 c. creamy or chunky peanut butter
2 c. sugar
1 c. water
1 tsp. soda
2 eggs beaten
1 c. oil
1 tsp. vanilla
1/2 tsp. salt
 
1 1/2 sticks oleo
1/2 c. buttermilk or sour milk
(1 Tbs. vinegar and 1/2 c. milk =1/2 c. buttermilk)
ICING
1/2 c. evaporated milk
1 c. sugar
1 Tbs. oleo
1/2 c. creamy or chunky peanut butter
1/2 c. mini marshmallows, 1 tsp. vanilla

Instructions
Mix flour, sugar, soda, and salt in 2 qt. bowl and set aside. In saucepan, bring oil, oleo, peanut butter, and water to a boil. Pour over dry ingredients. Add eggs, vanilla, and buttermilk. Blend well. Pour into greased or Pam sprayed 12 x 18 pan. Bake at 350 degrees for 15 to 18 minutes. Cool before icing.
ICING While cake is baking, make frosting. Mix milk, sugar, and oleo in pan. Boil 2 minutes. Add peanut butter, oleo, marshmallows, and vanilla. Stir until melted. Spread icing over cooled cake.
