     Raspberry Bars

Ingredients
2 1/4 cups all-purpose flour
1 cup sugar
1 cup chopped pecans (some ppl use chopped almonds)
1 cup good butter, softened
1 large egg
1 to 1.25 cup raspberry preserve (or one of your choice)
Optional-
1/2 ts almond extract
 

Instructions
Heat oven to 350°F. Line 9x13 square baking pan with foil, extending over edges of pan. Grease foil very well.
Combine flour, sugar and nuts in large bowl. Mix lightly. Then add butter, eggs and almond extract if using. Beat at low speed until mixture resembles coarse crumbs. Reserve 2c of crumb mixture and set aside. Press remaining crumbs into bottom of baking pan. Then spread jam evenly on top of pressed crumbs. Crumble reserved crumb mixture on top of jam.
Bake for 40 minutes or until lightly brown. Cool completely, then cut into bars.
Note- Make sure jam is not too runny.
