preheat oven to 425. Toss eggplant,peppers,onion and garlic with
olive oil,salt and pepper on large cookie sheet& roast for 40 min
turning once with spatula
Meanwhile cook orzo in boiling water for 7-9 min. drain and put in
large bowl
Add the roasted vegtables to the pasta,scraping all liquid and
seasings from pan into pasta bowl
combine dressing ingred and pour on pasta and veg. Cool to room
temp then add scallions,pine nuts,feta and basil.
