     Sausage and Egg Gravy over Biscuits

Ingredients
1 pound mild pork sausage
6 eggs
2 - 3 cups milk
1/2 cup flour
2 Tablespoons cornstarch
1/2 cup cold water
salt and pepper to taste
 

Instructions
In a medium pan, crumble up the sausage and add enough water to cover the meat. Bring it to a boil and let meat cook until done. Drain off the water. Place cooked sausage in a large skillet. Turn the temperature to medium. Let the sausage reheat for a few minutes, then add eggs. Stir in order to break the yolks. While the eggs are still liquid add the flour and stir into the eggs. When the flour is completely dissolved, then pour in milk (enough to fill the skillet). Stir constantly until the milk is heated through and hot to the touch. In a small bowl, add the cornstarch to some cold water. Stir the cornstarch until it is completely dissolved, breaking any clumps. Pour cornstarch water mixture into the skillet. Continue stirring until the milk changes consistency and becomes a gravy. Cook to desired consistency. Stir constantly to prevent scorching. Serve immediately.
