     Crawfish Bisque

Ingredients
1 recipe boulettes
1/2 c vegetable oil
7 Tbsp all purpose flour
1/4 c bell pepper chopped
1 c chopped onion
1/2 c celery
1/2-1 lb crawfish tails
1 qt water
1 tsp salt
 
1/4 tsp each black and red pepper
1/2 c chopped green onion
3 sprigs parsley

Instructions
Make a roux with flour and oil. Add bell pepper, onion, celery. Saute. Add crawfish, water and seasoning. Cook 15 minutes. Add boulettes and simmer 30 minutes. Add green onions and parsley and simmer 30 minutes. Serve over rice.
