     Helen's Macaroni & Cheese

Ingredients
1 (8oz.) package elbow macaroni
1/4 cup butter
1/4 cup flour
1 TSP salt
1/8 TSP pepper
2 cups milk
8oz. cheddar cheese, grated
 

Instructions
1. Preheat oven to 375ºF. Cook macaroni according to package directions; drain & set aside.
2. Melt butter in medium saucepan, then remove from heat. Stir the flour, salt & pepper into the butter until smooth. Gradually stir in milk. Bring to boiling, stirring. Reduce heat & simmer 1 minute. Remove from heat & stir in 1 1/2 cups cheese & the macaroni. Pour into casserole & sprinkle remaining cheese on top. Bake 15-20 minutes.
