     Chewy Oatmeal Cookies

3/4 cup Butter Flavor Crisco or Earth Balance
1 1/4 cups firmly packed light brown suger
Egg replacer to equal 1 egg
1/3 cup almond milk
1 1/2 tsp. vanilla
2 cups old fashioned oats - uncooked
1 cup quick oats - uncooked
1 cup all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. cinnamon
1 cup raisins
1 cup coarsely chopped walnuts

Heat oven to 375 degrees F Spray baking sheet with baking spray or grease with Crisco or Earth balance
Combine shortening, brown sugar, egg replacer mixture, milk, and vanilla in a large bowl. Beat at medium speed of electric mixer until well blended.
Combine oats, flour, baking soda, salt, and cinnamon. Mix into creamed mixture at low speed just until blended. Stir in raisin and nuts.
Drop rounded spoonfuls of dough 2 inches apart onto baking sheet. Bake one baking sheet at a time for 10-12 minutes or until lightly browned. Cool 2 minutes on baking sheet. Move cookies to cooling rack to cool completely.
