     toby's 5 lb. challa

Ingredients
1 cup warm water
3 tbsp. fresh yeast or 3 packages dry yeast
2 tbs sugar
4 tsp salt
1-2 cups sugar
4 eggs
1 cup oil
3 cups warm water
5 lbs high gluten flout
 

Instructions
mix first 3 ingredients and let sit till foamy
add the rest of the ingredients and mix together. machine or hand knead until you get a smooth doughy consistency. cover dough with a cloth and let rise at least an hour if not more.
don't forget to take challa and make a brocha! form into loaves and bake at 350 degrees (300 convection) until done the way you like it. the winklers like it light brown and doughy. enjoy and have a good shabbos!

i get 4 big challas out of this and one nice cinnamon bun. or i get more than 36 muffin challa rolls. voted best challa recipe by all my guests.
