     Grandma Mack's Easter Loaf

Ingredients
2 1/2 lbs pork shoulder
2/1/2 lbs veal (from the neck)
1 dozen eggs
1/2 loaf of stale bread
1 clove garlic
Green onions (just the greens - chopped)
salt and pepper
nutmeg
1/2 farina
 

Instructions
Saute onion in butter or shortening until soft, not brown. Boil meat in salted water until tender. Store in fridge with water in reserve.
The next day, chop or grind meats into smaller pieces. Soak the bread in the reserved boiling liquid. Beat the eggs and add in the greens. Mix in the meat and bread and mix everything together.
Bake 1 hour at 350 degrees.
Alternate Version- use 3 lbs veal shoulder, 3 lbs pork shoulder, 1 dozen eggs, 3 big onions, chopped parsley, chives and garlic.
Serving Suggestions
You can use cubed ham instead of pork shoulder if you wish. Also - you can buy farina at Amazon.com or at Whole Foods (or stores similar)
