     BUTTERSCOTCH PUDDING

Ingredients
1 c. packed dark-brown sugar
1/4 c. water
1/4 c. (1/2 stick) butter, in pieces
3 Tbs. cornstarch
1 c. milk
1 c. half-and-half
1 1/2 tsp. vanilla
 

Instructions
Mix sugar and water in glass measure. Microwave, covered, on high power two minutes; until sugar dissolves. Stir in butter. Mix cornstarch, milk and half-and-half in bowl. Add to sugar mixture. Cover with vented plastic wrap. Microwave on high six minutes, stirring once halfway. Add vanilla. Pour in dishes. Chill one hour. Serve with whipped cream.
