     Tex-Mex Beef Stew

Ingredients
1/2 cup flour
3 tsp chili powder
1/2 tsp salt
1 tsp oregano
10 oz frozen corn and bell peppers
2 lb beef chuck cup up
3 Tbsp oil
1 lg onion
3 cloves garlic
 
2 cans (14.5 oz) beef broth
1 can (14.5 oz) tomato sauce
1 can rotel
rice

Instructions
In a shallow dish, mix together flour, 2 tsp chili powder and salt. Coat the beef. Reserve remaining mixture. In a large pot heat 2 Tbsp oil over high heat. Add beef in small amounts. Cook until brown. Heat remaining oil. Add onion and garlic. Cook over med heat. Cook 3-5 min. Sir in extra flour mixture. Add broth, tomato sauce and oregano. Boil. Simmer 1 hour. Add remaining ingredients. Cook 20 min.
